COCONUT & BANANA BALLS {RECIPE}



SUPER EASY TREATS

If you're looking for something tasty and yet not super calorific, this recipe is for you. It's and adapted version of WhatOliviaDid's Homemade Bounty Balls
They looked so yummy and easy to make - and I already had all the ingredients in my kitchen, so I decided to give them a go. You could even go as far as to call them healthy treats - they only have a small amount of sugar in them! 

HERE'S WHAT YOU'LL NEED:
{Makes 12 balls}

| 100g desiccated coconut
| 4 tbsp coconut oil
| 80ml coconut milk
| 40g icing sugar
| 1 ripe banana
| 15g banana flavoured whey protein {very much optional}
| 200g dark chocolate

1. In a big bowl, mix the oil and the desiccated coconut until blended well.
2. Add in the milk, icing sugar, mashed banana, and protein. Mix well.
3. Put the mixture in the fridge for 15 minutes or until a bit hardened - this makes forming the balls much easier!
4. Line a baking tray with greaseproof paper, roll the mix into balls and place them onto the sheet. Refrigerate for an hour.
5. Break up the chocolate and melt in a saucepan on the hob on low heat. Don't stir too much to avoid lumps. Leave to cool on the side.
6. Once the chocolate has cooled down {about 5-10 minutes} take out your balls from the fridge and dip them in the chocolate, using a spoon. You have to work fast at this point, otherwise the chocolate becomes increasingly lumpier and won't stick to the balls very well.
7. Pop the chocolatey balls onto the tray again and stick in the fridge for another hour. 

That's it! 

Keep in an airtight container for up to 5 days. Let me know if you give these a go!
