MY VALENTINE'S




I had a great Valentine's weekend, did you? First I was surprised with a flower delivery (and despite not wanting to be all lovey dovey I couldn't resist posting a picture on my instagram). To return the surprise, I made a cake for my boyfriend. We didn't go out for dinner but stayed in and cooked one of my favourite meals and on Saturday we went to do some exercise together. I hope y'all had a great weekend too.

If you like the look of the cake, here's a recipe:

Yoghurt Cake

1 yoghurt (vanilla or lemon)
then use the empty plastic cup for measurements
3 cups flour
1 cup sugar
1 cup oil
around 10 g raising agent
3 eggs
a little lemon zest

lemon juice and icing sugar for the icing

All you do is basically mix it all together and stick it in the oven for around 30 minutes, I had my oven on 180 degrees and turned it down to 140 after about 15 minutes as I wanted it to bake through and through.
When the cake cools, mix together a bit of lemon juice and icing sugar and spread across the cake. Depending on the form you're using, you can cut the cake in half horizontally and put some icing inside it, then put it back together.

It is a really simple and nice cake, the yoghurt prevents it from being dry in the middle. It's an all time favourite and usually gone by the next day plus I'm sure you already have half, if not all, the ingredients in your cupboard.
